My husband and I built an outdoor oven. We initially purchase a pizza stone to use as a cooking surface. After using it twice the stone cracked. I saw an article about a traveling chef that used a baking steel as a cooking surface. I contacted Baking Steel to get their opinion and they suggested a 3/8 steel. I purchased the 3/8 steel and have used it several times. It works great! I have enjoyed corresponding with Baking Steel. I been using ceramic stones for years with good success . I have used them mostly on gas grills . I wanted to try my conventional oven with the steel and I was very impressed with the way it generated a highger heat for longer.Thinking of getting another steel to put 5 inches above the bottom one to avoid the broiler step. Pizzas came out great.
