Our jaggery powder comes from a regenerative sugarcane farm in Indapur. The juice is pressed, filtered, and cooked down over firewood in an iron wok until it thickens, then beaten by hand as it cools — that's what gives it this fine, powdery texture instead of a hard block. Nothing refined, nothing added.

Delicious, classic Masala Chai
I have found THE ONE. I've given away so many versions of "MEH" or "YUCK" that I never thought I'd find one that reminds me of the cardamom-forward, kicky Masala Chai I had in India many moons ago.
