Ground Bison Meat

We have been buying Bison from you for several years now. Zero complaints. Always excellent, we only buy ground and briskets, and are gifted a nice mixed box at Christmas. Steaks, etc. Recently I went for the 10# of ground Bison. It was slightly grisly and our son did bite a piece into the dreaded piece of bone. I have never thought you cut too close, never once before. We have been eating American Bison for close to 40 years now, started by buying 300-500# from a friend who processed just one every six months for several of us. We realize it’s a process to grind and find enough fat to add. Over the years we have seen great processing and poor processing from four different states/companies. I am wondering if the 10# ground deals are processed differently? So far the first two pounds which were burgers and taco meat were fine. It was in chili that 3 of us got “bad bites”. We will continue to buy our bison from you, but I will avoid the ground deals. Butchering is a fine art. Perhaps you have a new person who came from a place that always cut too close to the bone?? And I hope it will be corrected because we WILL continue to buy from you because your product has always been excellent. Thank You MaC
